Ciao a tutti! We are Matt and Melissa, the owners of Bufalina wood-fired pizza in Guilford, Connecticut. We are creating this newsletter to offer a glimpse into the rhythm and pulse of Bufalina and what inspires us. Before opening the restaurant, we spent several years living and working throughout Italy, resulting in the publication of two cookbooks about Italian farm cuisine. We will be on sabbatical this summer to research for our third cookbook. We cannot disclose detailed information about the book, but rest assured, we are creating this space to share some of our discoveries, recipes, and photos, as well as how we use our findings as inspiration at our restaurant.
It has been thirteen years since we opened Bufalina, and we always strive to bring innovation and creativity into our restaurant. We are excited about this book project and the opportunity it will provide us to take time away from our daily routine and learn new aspects of Italian cuisine and culture. Most importantly, the project will reinvigorate us and bring new life into everything we do. We hope you will embark on this journey with us, whether it's reading our weekly letter or coming into the restaurant to taste the food.
